Founded by Gérard Valette in 1977 in Chaintré, a small town on the border between Mâconnais and Beaujolais. The winery is known for long ageing period, with some wines ageing up to 72 months on lees in casks before bottling. Vineyards converted to organic in 1990. Nowadays, his sons Baptiste and Philippe Valette manage the winery.
“Tradition” is the natural white wine from grapes from the estate’s own vineyards without any chemical treatments (no systemic sprays, herbicides or insecticides), harvests are done by hand at optimum ripeness. The vinification process is also natural, with native yeasts, without chaptalisation or acidification, and no sulphur, aged in old French oak barrels for 24 months. Style is usually rich, but fresh with minerality, and great ageing potential.
