The winery is founded by Pierre Fenals who studies organic chemistry and molecular biochemistry, always been passionate about wines and biodynamics inspired by Rudolph Steiner. He enrolled at the Beaune wine school at 52, then followed by a series of jobs from some natural wine pioneers. In 2009, with the help of a few friends, he moved to Saint-Aubin to create Maison en Belles Lies (beautiful lees).
This wine are made from grapes planted on limestone rich and fossil rich soils. Aged in 70% stainless steel and 30% older 500ltr barrels for 14 months, with no fining, no filtration, and no additional SO2. Also no chaptalisation, no oenological products involved, and no batonnage (lees stirring).
